THREAD: Help! My homemade B12 gummies turned into a sticky mess - recipe tips?Started by RhinoRich31

Hey everyone, amateur chef here trying to make my own B12 gummies for the family. I used gelatin, some fruit juice, and a B12 powder supplement I got online. Followed a basic gummy recipe but instead of cute little bears I got this weird sticky blob that won't set properly. Tastes fine but texture is all wrong. Anyone have experience with vitamin powders in gummies? Does the B12 affect how the gelatin sets? I'm thinking maybe I need to adjust liquid ratios?

RhinoRich31 - omg I feel you! I tried making agar-based B12 gummies for my yoga students last month and had similar issues. The first batch was too hard, second batch too soft. I find that B12 powder can sometimes react with the gelling agent. What worked for me: dissolve the B12 powder in a tiny bit of warm water FIRST before adding to your mixture. Also, with gelatin, make sure you're not overheating it after adding the vitamins - high heat can break down both the gelatin structure AND the B12 potency! Maybe try a test batch with half your usual liquid?

Sleep-deprived parent of twin toddlers here - I've been making B12 gummies for months because my kids refuse pills. RhinoRich31, couple quick questions: 1) What's your gelatin-to-liquid ratio? 2) Are you using flavored B12 or plain? The flavored ones often have fillers that mess with texture. My pro tip: add a teaspoon of lemon juice - helps with setting AND masks any vitamin taste. Also, pour into molds and refrigerate for 2 hours minimum, not just 1. My first batch failed because I was too impatient (toddler screaming in background lol).

Thanks both! JoyfulJack33 - good call on dissolving separately, I just dumped the powder right in. HubermanHopeful579 - I was using 2 tbsp gelatin to 1 cup juice, with about 500mcg B12 powder (unflavored). The lemon juice trick is genius for cutting that slight vitamin taste. Do you think agar would work better than gelatin for B12? I've read it sets firmer. Also, anyone know if citric acid (for sour gummies) affects B12 stability? Want to make some sour versions for my niece who's picky about supplements.

RhinoRich31 - Agar sets differently for sure! It needs to boil to activate whereas gelatin just needs warm liquid. For B12, I'd stick with gelatin since lower heat preserves the vitamin better. Citric acid should be fine in normal amounts - I add it to mine. Just mix it with your sweetener before adding to hot mixture. Remember: natural fruit purees (like mango or berry) can help mask taste AND add nutrients! Let us know how batch #2 goes - maybe post pics if they turn out cute! 🧸
