THREAD: Help! My homemade vitamin gummies keep turning into goo - recipe tips needed!Started by QuantumQuincy898

Hey everyone, been trying to make my own caffeine-infused gummies at home using gelatin and some vitamin C powder I had lying around. Followed a basic recipe online but my last two batches turned into this weird rubbery-goo hybrid that tastes awful. Anyone have a foolproof ratio for gelatin to powder? Also, does the type of vitamin powder matter? Mine clumped up like crazy when I mixed it in.

Oh man, I feel your pain! I tried making paleo-friendly gummies with agar agar and collagen powder last month - total disaster. They wouldn't set properly and tasted like sweetened chalk. From my fails, I learned you gotta dissolve the powders in warm liquid FIRST before adding to your base. Also, agar needs to boil for a minute to activate properly. What liquid are you using? I found coconut water works better than plain water for flavor masking.

As a fitness pro who makes custom blends, I can tell you the issue is likely your powder-to-liquid ratio or temperature control. Vitamin powders vary in density - are you using pure ascorbic acid or a blended formula? For every cup of liquid, I use 2 tbsp gelatin + 1 tsp max of powder. Heat gently (don't boil gelatin!) and whisk constantly. Pro tip: add a pinch of citric acid to enhance flavor absorption. What's your exact process?

Thanks both! @MangoMia215 I was just using hot water from my kettle, maybe too hot? @VibeVitamins It's just plain vitamin C powder from the health store. I did 1 cup water, 3 tbsp gelatin, 2 tbsp powder... sounds like I went overboard on the powder lol. Do you think adding caffeine powder would make it worse? Trying to combine my morning vitamins with my pre-workout.

Whoa yeah 2 tbsp powder is way too much - that's why it clumped! Start with 1 tsp max. Caffeine powder is SUPER bitter and potent - be careful with dosing. Maybe make separate batches? For texture: mix dry powders together first, add to WARM (not boiling) liquid slowly while whisking. Let us know how round 3 goes!
