Homemade Vitamin C Gummies – Gelatin vs Agar and a failed batch?
Hey everyone! I've been trying to make my own vitamin C gummies at home using gelatin and ascorbic acid powder, but my last batch came out super rubbery and tasted awful. I used 3 tbsp gelatin, 1/4 cup cold water, 1/2 cup boiling water, and 1 tsp vitamin C powder. Did I mess up the ratios? Should I use agar instead? Any tips for a chewy but not rubbery texture? Also, I didn't think about the acid breaking down the gelatin – I'll mix the vitamin C with a bit of water first. Should I use a higher quality gelatin? I just used the Knox brand from the store.
I use Knox too, it's fine. The key is not overheat it. Also, let them set in the fridge for at least 4 hours, or overnight. Patience is key! And if you want them a little healthier, you can add a few drops of lemon juice or orange extract for flavor, but keep it minimal so they don't get too firm. You got this!
